Balinese White Mango, Wani Bali

Wani Bali is an exotic fruit also known as Balinese white mango (Mangifera caesia Jack) , one of tropical fruit which belongs to genus mangifera (mango). The fruit is specifically grows and could be found only in the Island of Bali . The shape almost alike mango but sometimes it can be identical as a shape of avocado too.   The vibrant light green skin color has always tantalizing, makes wonder and attract people to explore. The characteristic flavor and aroma have prompted to many people, I would say its a blend aroma of Mango and Jackfruit.    The milky white flesh high in fiber, its generally sweet and contain a slight taste sort of liquor (alcohol) and the forms of stone fruit percentage is 60% more than the flesh. However, the consumer prefers the fruit due to the specific flavor and delicious sweet taste. I wasn’t planning to make this kind of rustic dessert after I saw a quick look at my cooking book "Contemporary Balinese Asian Cooking ", its too appealing attractive not to note and not to give it a try. The striking ingredients were hooked me, I salivated over the picture and was suddenly inspired.  Pineapples mango sate palm sugar sago , it sounds exotic kind of rustic dessert, those pineapple and mango were threat onto bamboo skewer grill or pan sear, serves with palm sugar sago and topping with grated coconut. I believe that you would have imagined how the combo looks like :) For some reason, I decided to not present the palm sugar sago serve together with the fruits sate, I just want to have them as simple as that. The major preparations to this dessert that I hate the most is doing the carving on the pineapples, in order to removes the thousand black eyes on the exterior flesh, it such a pain for me. Mangoes are still abundant here at my place, they are fantastically fresh in their season, I am a big fans of mango and I really wish that they are would last until next year, I wish… I have always create to make something from mango since it seasonal and make sure that my creation always hits the day. My most favorite fruit snack is making them as candied mango ( manisan mangga ) , very quick to make and really addicted, they are absolutely great to be a snack while watching movie at home during weekend, Oh Best! I live in a place which is very favorable, surroundings by so many mango trees, many of them. At the first year when I arrived at this place, exactly this time of year, It was arum manis mango seasonal *mangga arum manis .  I can plug the mango as many as I want at anytime, no one would make complain because its allowed by the management, this is really cool ah… To me, this is absolutely advantageous place to live at as I really big fan of mango, hihi..i can make manisan mangga, pickled mango, mango salad, sambal mangga, mango granita, mango juice, mango pops and many more variety of mango dishes. Since the mango season hits the island and of course the mango trees started to produced their wonderful fruits, I have made my mango chutney yesterday its from naturally grown mango tree of our compounds. I’ve lived in Goa – India for 6 years, so lassi is one of my revitalize drinks in my everyday life at that time, the simple and satisfying is a delicacy beverage. It was a time where I used to enjoy the traditional lassi in the New Gandhi market in goa, the lassi has touched of savory and the mild aromatic of spices. To me, it was a distinctive refreshing I choose fruity lassi this time as it is enormously fitted to my baby, flavorful and healthy. Rujak Serut

I was just staring at the fruit basket and I have no idea what will I make with my half-ripe mango, which has sitting for two days, the reason I didn’t bother to touch because it taste terribly sour and it would make my tongue gone numb. But then, you see…it turns to a delicious matchless, perfect ! It call Rujak serut literally means "shredded fruits salad", and is another variant of Indonesian fresh fruit salad * Rujak. The ingredients are such mango, carots, cucumber, pineapple, pomelo or even raw sweet potato, by the exceptions that the fruits are not cut into bite-sized pieces, but shredded into a roughly grated consistency. This is what a good thing when mango seasonal has arrived, every supermarket have display and offered such a mountain of mangoes as well the prices are quite value for money. I was so exited when I saw different variety of mango suchlike mangga harum manis ( harum manis mango ), mangga golek ( golek mango ), mangga lali jiwo ( lali jiwo mango ) and many more has been display in the fruits sections, it is a mean that my party has just started :)) I am very lucky being a person, who was born and grew up in such a beautiful country Indonesia which has such a marvellous tropical fruits .  Some of my most vivid childhood memories back then swivel around my front yard which has mango tree and it gave us the best harvest every year yet one of my favourite time take place every year and those days I always fancy of my platter of ripe mango, peeled, cubes, nothing was ever compare with, well I  miss it so ;) I was having fun browsing several different type of sals...

This is perhaps typical simple salad but its very tasty and appetizing. Manisan mangga-Candied mango

In addition to Rujak (Indonesian style fruits salad) mango can also be candied, there are variety of candied mango such spicy candied mango which chilli added to it and plain candied mango. Where I live now is not hard to find sellers of various candied fruits, such a candied salak (zalaca), candied papaya, and candied mango. The colorful of fruits candied are very attractive and unique, the best part is that we can give it a try before decided to buy. Making candied mango its very easy and its simply needed the very basic ingredients and simple method too.   Well, This time I make homemade candied mango, besides delicious and of course its Healthier that the one sells outside which contain hesitant food coloring.   I'm doing my candied mango just plain without adding the chilli and food coloring and its absolutely perfect for Heavenly nibble. Rujak Gula / Balinese style fruits salad *

--> Rujak is actually a salad made of different kind of slices fruits serve along with sweet/ sour/spicy sauce and rujak gula is Balinese style fruits salad which is most Balinese are familiar with, therefore Rujak means fruits salad and gula means sugar Rujak gula can be found mostly at every corner in the island of bali , specially on the side of the beach among other vendor. To me, the most attractive part is when seeing the rujak seller doing vigorously grinding for the sauce using traditional mortar and pestle, adding without trace quantity of every ingredients and slicing the fruits, trust me, the taste is scrumptious…Worthy to note! This is particular knife and its commonly used by rujak seller in bali, look at it !  its looks unique, isn’t it? Its terrific sharp and gives wavy pattern to the slicing fruits, it makes Balinese rujak gula looks typical. I would say this is the most drooling fresh green mango salad I have ever wondered.  I was born and brought up in a small town of east java Indonesia, i still remember when mango season coming during month of August which was everywhere in the market and side road they were display several different kind of mangoes-from ripe to fresh raw--such a seductions to all mango lover--in fact my self is a big fans My great fun memorized when my mother used to take me along to the market once a week on my holiday school it was such a great chance being her company and helping her to carry her shopping stuffs.  The other thrilling part which was making me could not awaiting Sunday holiday coming very soon is the moment I entered the market, oh...unbelivably amazing scenery--seeing the peddlers are selling variety of primary foods, traditional cake (jajan pasar) kitchen tools and many other stuffs, i wish i could rolled back the time--siiighh...!!
