Baked Macaroni Schotel

I was actually planning to make a simple mozzarella cheese stick for our snack on that day and imagining of decent fresh salad to go with. Since I have a packet of my favorite cracked peppercorn cheddar *sharp and crumbly, I was thinking that it would be perfect touched for the salad. After thinking again and recalled my earlier day, how I love to spent my chilly and peaceful rainy season with my macaroni schotel. The whole scene of mozzarella stick and salad was turn-off and I said forget it, I made my mind to bake the macaroni schotel. The recipe adapted-taken on line from few links. I have kept it recipe in my folder very long time ago at the time when my cooking interest was hot and really happening and today I adapt the recipe all over again. Sambal Matah Bali with Torch Ginger

According to the bibliography of Balinese cuisine there are around 33 different kind of sambal, I was amaze to know about this. Like many Indonesian, Balinese food tends to be preferred rather spicy, the merge between spiciness, tastiness and complexities of the spices used are interesting, somehow I do call it an exotic dish! Among other diversity of Balinese sambal, Sambal matah is the most famous condiment in Bali and I’m going to reveal here. Sambal matah  Bali, sambal means Indonesian spicy condiments, while   matah means raw (mentah) and fresh, so sambal matah would made in a way by it left raw and remain fresh.  However,  my style of sambal matah  is pretty simple and easy to make,  I  modified  slightly  different  from the authentic sambal matah, by adding small amount of balinese torch ginger 'bongkot' to gives another  characterise  flavor but its still goes well for nasi campur Bali...

It definitely makes my sambal even fresher and alluring, also they are absolutely great for the tomato salad as it a good source of natural vitamin A and C.

I warp up Soto Ayam (Classic Indonesian aromatic chicken soup) to be the beat of today posting.  I have finally made it uncovered after it just being a plan and writing it recipe for blog--on and on, in fact, this time it has been exposed and proudly inserted in my label.
