Bitter gourd Stir Fry With Dried Shrimps

that the Island has taken me to have more sensitively and highly appreciation
to the nature, gracefully feeling that I deeply brought into such an enormous level.

Well, I
have done a new recipe to post away, a simple homecook side’s dish that
absolutely packed with good benefit into our body.
Although some people may turns away by the bitterness of this gourd, in-fact, it can really sweeten your health because of its disease preventing and also good source of anti-oxidant.
It is an
easy peasy recipe and that pretty much I wanted to share, it can be sides with
Ayam Goreng (Indonesian Fried chicken) or any other side dishes that you like,
but I fancy brown rice instead of regular steam rice to go with.
Its more
effective if just pass all the words and give you lots of picture to satisfy
*of course with the crucial recipe that I made up.
Tips,
Salt is
added to finely chopped bitter gourd and then it is squeezed, removing its
bitter juice to some extent and then rinse up with running tap water through a
colander.
The
outcome will be less bitter also you’ll get the crispy texture.
Bitter
gourds Stir-fry with Dried Shrimps
Ingredients
4 pods
bitter gourds
½ cup
good quality dried prawns
5 cloves garlics,
chopped
5
shallots, slices
4
tablespoons water
2
tablespoons vegetable oil
Desire
quantity Red chilli or Bird eye chilli, optional
Sufficient
amount grated galangal root, substitute galangal powder
Salt to
taste
*I enhanced the flavour with
sufficient amount of ikan bilis granules prefer NO msg, substitute good quality
fish sauce
For the
garnish
Crispy
fried garlic and shallot
Preparation
Soak up
dried shrimps with water in a small bowl.
Wash the bitter
gourds and then cut it lengthwise. Discard the seeds and pith.
Slice the
bitter gourds with kitchen knife.
Tips:

Direction,
Heats up
oil in the wok over high heat, add chop garlic until fragrant.
Add slice
shallot, slice chilli , grated galangal root and dried shrimp, stir fry about 2 minutes
Add the
bitter gourds, salt, ikan bilis granules *if using or dash of fish sauce and
water. Give the mixture a good stir, lower the heats to medium and cook about
10 minutes.
Turn onto
a dish, garnish with crispy fried garlic and shallot and serve at once.
