Chocolate and Banana loaf

It has been a very busy weeks though, preparing for the upcoming holiday season.
I have been hectic working on Xmas baking, making jars of cookies, super slices, super bars, tiffin fridge cake and other sweets that sounds simple for sure, although it sounded so tiring but I’m happily through with it fun.

I was looking something easy *the fact, I always keen on something simple for our special treat for the Xmas* which is does not required special trick, fussy tips or the longer timing of preparations and this recipe is a classified as all I want, easy peasy!

I made my Xmas treats mostly taken from my cookery books collections and also some of them i got it within browsing around. I fancy a recipe that marked as five star delight and make sure it giving 100% convincing that the results would be the best! 

When my holiday mood had turned groovy, I have decided to bake something easy but the same time it smells and tastes Christmasy. 
I would be more happier able to make this fabulous festive season one to remember that will put everyone in the family having a holiday mood.

The recipe that I have found is just perfect for the holiday season. Its chocolaty and the warmth comfort scents would makes Christmas truly special. 
Its so moist and not to mentions of the rustic looks and exotic smell comes from fresh-baked spiced loaf cake that gives my home a festive fragrance that I could ever imagine.


Chocolate and Banana loaf


    1 1/2 cups all purpose flour
    1/3 cup sugar
    1/4 teaspoon mixed spice—I use spekuk spice
    1 teaspoon baking soda
    1/2 teaspoon bicarbonate of soda
    2 lightly beaten eggs
    1/2 cup milk
    1/3 cup olive oil
    3/4 cup mashed ripe banana
    1 1/2 cups chopped milk chocolate


Preheat oven to 170°C. Grease and line a 10cm x 20cm loaf tin. 
Sift flour into a large bowl. Add brown sugar (i use regular sugar)
mixed spice, baking powder and bicarbonate of soda. 
Make a well in the center.

Place eggs, milk and olive oil in a large bowl and whisk until well combined. 
Stir through mash banana and milk chocolate.

Pour the banana mixture into the center of the flour mixture, 
folding gently until just combined. 

Spoon the mixture into the prepared loaf tin. 
Bake for 45-50 minutes or until golden and cooked through. 

Remove from oven and set aside to cool for 5 minutes before turning onto a wire rack. 
Serve warm or at room temperature.

Bumbu Spekuk/spekkoek (spekuk seasoning ) also called as mixed spice.
Its famous seasoning for lapis legit (Indonesian thousand layer cake)  
which consist of a mixture spices of cinnamon, cloves, mace, and cardamom.
You can always make your own spekuk seasoning

Seasoning spekuk / spekkoek:
2 tablespoons cinnamon powder
1 tablespoon cloves powder
1 tablespoon mace powder (bunga pala)
1/2 tablespoon ground cardamom

Mix all ingredients together, seasoning spekuk ready for use as needed.
* Keep in small jar for future use.
